Preheat the oven to 390 °F and line a cookie tray with parchment paper.
Mix all the ingredients together in a bowl. If the mixture is too thick, add 1-3 Tbsp of egg whites.
Scoop a full tablespoon of dough for each cookie, and place them on the tray spaced evenly. Use a fork to press down and flatten the cookies to your desired size.
Place the tray in the middle oven rack and bake for 15 minutes. Let the cookies cool for 10 minutes before serving.
